The Base: 1 tablespoon olive oil 1 medium yellow onion, chopped 3 garlic cloves, minced 1 medium red bell pepper, chopped 1 lb lean ground turkey (93% or 99% lean) Seasonings: 2–3 tablespoons chili powder (start with 2 if sensitive to heat) 2 teaspoons ground cumin 1 teaspoon dried oregano 1/4 teaspoon cayenne pepper (optional for extra kick) 1/2 teaspoon kosher salt (plus more to taste) Liquids & Bulk: 1 (28-ounce) can diced tomatoes (or crushed tomatoes) 1 ¼ cups chicken broth 2 (15-ounce) cans dark red kidney beans, rinsed and drained 1 (15-ounce) can sweet corn, rinsed and drained Toppings: Fresh cilantro, chopped Sliced avocado Shredded cheddar cheese Dollop of Greek yogurt (as a sour cream sub)
