Ingredients (one per line)
1 ½ lbs chicken breasts or thighs, cut into strips 2 bell peppers (red/yellow), sliced 1 red onion, cut into wedges The "Feast" Elements (Serving) Hummus (store-bought is fine) Tzatziki Cucumbers, diced Cherry tomatoes, halved Kalamata olives Feta cheese, crumbled Pita bread or cooked couscous
Instructions
Marinate: Toss chicken and sliced vegetables (peppers/onions) with the marinade ingredients. Roast: Spread chicken and veggies on a large sheet pan. Bake at 400°F (200°C) for 20–25 minutes until chicken is cooked and veggies are tender-crisp. Serve: Place the sheet pan in the center of the table. Serve with warm pita or a bowl of couscous. Let everyone build their own plate: swipe of hummus, pile of roasted chicken/veggies, topped with cold crunchy cucumbers, tomatoes, and plenty of feta.
