A healthy, one-bowl meal that's perfect for busy weeknights. Cook jasmine rice according to package directions. Cut 1½ lbs chicken thighs into bite-sized pieces and cook in a large skillet until golden. Steam 2 heads of broccoli florets until tender-crisp. For the teriyaki sauce: whisk together ½ cup soy sauce, ¼ cup water, ¼ cup brown sugar, 2 tbsp rice vinegar, 1 tbsp sesame oil, 2 grated garlic cloves, 1 tsp grated ginger, and 1 tbsp cornstarch. Add sauce to cooked chicken and simmer until thickened. Serve over rice with broccoli.
